Look what I found in the garden!
There are several more waiting to be picked..and eaten!
StoneGable Garden Salad With Lemon Vinaigrette
1 head garden lettuce
3 TBS toasted pine nuts
shaved Parmesan cheese
1 part fresh squeezed lemon juice
2 parts good olive oil
1/2 tsp mustard
good pinch of sea salt
Rinse head lettuce and tear into bite size pieces. Blot lettuce with paper towels.
Squeeze lemon juice in a jar with a tight fitting lid. Add twice as much olive oil. Add mustard and salt. Put a lid on the jar and shake vigorously.
Put lettuce in a bowl and drizzle with vinaigrette.
Plate lettuce. Sprinkle with toasted pine nuts and shaved Parmesan.
From garden to plate!
Now that's what I call fresh!

That looks so cool and refreshing. I have a favorite salad recipe that calls for toasted pine nuts and parmesan, I never tire of that combo.

I love salads when the weather gets warm. However, I'm jealous of your garden! Too many trees in our yarn means no sn for the plants to grow. This year, we bought two tomato plants with cages that already had tomatoes on them. First "garden" that we've had at this house.
