Weekly Menu

Monday
Panko Fried Chicken with Apple Gravy
Mashed Potatoes
Braised Brussels Sprouts With Bacon and Shallots

Recipe: Panko Fried Chicken With Apple Gravy
When I saw this recipe at Cuisine Kathleen I knew that it would end up on the menu. Doesn't that sound fabulous? Just like Kathleen's, blog~ full of wonderful recipes and tasty treats!

Recipe:Braised Brussels Sprouts With Bacon and Shallots
1 1/2 lbs brussels sprouts, cut in half
8 slices bacon, cut into cubes
1 small shallot, chopped
salt and pepper
2 sprigs of fresh thyme
2 cups good chicken stock
1 TBS good white wine
Parmesan cheese
panko bread crumbs
2 sprigs of fresh thyme

Preheat oven 350 degrees.
In a large ovenproof pan, add bacon and render fat, about 3-4 minutes. Add shallots and cook for 3 minutes. Add Brussels sprouts and cook on each side until caramelized. Add thyme and cook for an additional minute.

Add chicken stock until Brussels sprouts are half covered and cook gently for 10 minutes, covered.
Add wine and cook for another minute or two.

Toss bread crumbs and Parmesan cheese together and sprinkle over Brussels sprouts. Put in oven and cook until the dish is hot and crispy.

Tuesday

Halushki (Fried Cabbage  with Noodles)
Sliced Garden Tomatoes

Oh, what a wonderful dish. Don't turn up your nose on this one. It is delicious!!!! And your whole house will smell as if you have been cooking all day. Look for Halushki on Thursday's menu. This is a StoneGable recommended recipe!

Wednesday
Butternut Squash Lasagna

I could eat this EVERY DAY! No kidding. It probably shows up on my blog more than any other recipe! Click here and look for this winner of a salad on Tuesday's menu.

Thursday
Red Chicken
Roasted Potatoes and Root Vegetables
Homemade Applesauce

Recipe: Red Chicken
My family loves this easy dish. Moist chicken, and very flavorful!
6 chicken thighs
6 drumsticks
1 bottle Catalina salad dressing
1 package Lipton onion soup
1 jar apricot jam

Preheat oven to 350 degrees.
Combine the dressing, soup mix and jam. Add chicken and thoroughly mix. Turn out the bowl onto a large rimmed baking sheet and cook chicken until it is done through, about 50 minutes to 1 hour.

Oh, yummy! This soup will feed a crowd for lunch. Along with a beer bread, it will fill our tummies with hearty deliciousness! Mary at One Perfect Bite makes all things fabulous! And this clam chowder looks perfect!

I would not think of having anything else. Beer bread is easy and beyond words GOOD! So many StoneGable friends have made it and commented on how GOOD it is! I AGREE! Click here and look for Beer Bread at the bottom of the post.

Recipe: Panzanella Salad
I am still using tomatoes from the garden. This taste of summer is a delightful way to use up little heirloom tomatoes!  Panzanella Salad could be a meal in itself!

Recipe: Loaded Potatoes
8 baking potatoes
butter
bacon
cheddar cheese, shredded
green onions, finely chopped
cheddar cheese

Bake potatoes until done. Split potatoes and add a small pat of butter. Top with cooked crumbled bacon, cheddar cheese and green onions. Add a dollop of sour cream.

    My dad left over the weekend. When he is here I cook and I eat!! So, I'm taking a month off of fattening things unless we have an event to host or go to. So...your menu has me drolling today! I think I could eat 2 of those potatoes...right now!

  20. That red chicken recipe we call "carolina" or "catalina" chicken. The first time I made it I was looking for the apricot jam and an older woman asked me if that was the recipe I was planning to make. She told me it was an "old southern recipe." We love it and I often have it for guests, served with a moist corn bread (loaded with --oh dear--melted butter, sour cream, corn, and jiffy corn bread mix)
