When I make ice cream cookie s...I love this Yvonne! When I make ice cream cookie sandwiches I have always used the break and bake cookies and then added just plain ice cream once the cookies cooled. I never thought to soften the ice cream and add anything or use already made cookies from the store. I was looking for a dessert idea for today and something I could make with my girls and these look perfect!
