ROASTED TOMATO MINI PIES


Need a quick dinner? But not just a quick dinner... a dinner that is scrumptious? And not just a scrumptious dinner... but a dinner full of fresh flavor? And not just a dinner full of fresh flavors... but a dinner with a flaky crispy crunch? And not just a dinner with a flaky crispy crunch... but a dinner with WOW factor...

Then this is the recipe... it is fast, scrumptious, fresh, flaky and WOW worthy...



I saw a picture of a mini tomato pie in a magazine and knew I had to make it... but when I was ready to make it I could not find the magazine! Note to self, you have way too many magazines!

So I made up my own tomato pie. Filled with the zippy taste of just picked tomatoes and a great creamy Parmesan basil filling, this little pie has big big flavor!

My family loved it before it came out of the oven. The great aroma of this pie introduces itself before it hits the table!





I served this with an Arugula Salad and had a great summery meal!

Funny I am having 10 girls over next week for my best friends bday, unfortunatley not going to be in town the two days before so desperately looking for "doable' things to serve that day and this just might be it!   5. Yvonne -- these look devine!! I am a huge frozen puff pastry fan - perfect for quickies that don't taste like quickies. I am pretty close to harvesting my first tomatoes of the season AND I have been using my fresh basil in every way I can think of -- the goodness of summer!

    make this for a nice dinner. We have only had one ripe tomato so far this year and
    that went on a bacon, lettuce, tomato sandwich.

  28. These look wonderful and will be perfect to share in my cooking classes. I have some beautiful yellow tomatoes just waiting to be used in a recipe like this. Thanks for sharing....and thank you for stopping by ArtfullyGraced. I hope you try those simple little pies. (I gave up making my own pastry...when the exec. chef from a 4 star restaurant in Dallas complimented me on my apple pie's crust, I decided to ALWAYS use Pillsbury refrig. crusts!!! He laughed at me...and winked. Said he'd start using them, too!)
