Pumpkin Bread Pudding




If you are craving a delicious, mouthwatering fall bread pudding I have just the perfect treat for you... Pumpkin Bread Pudding.

My friend, Marilou (thanks, Marilou!)  made this for bible study and it was a smashing hit. I have since made it for breakfast, brunch and as a dessert. Everyone almost licks their bowls clean!!!!

I hope you try this scrumptious bit of fall delight, you won't be disappointed!



STONEGABLE PUMPKIN BREAD PUDDING

10 cups cubed croissants, toasted (about 6-7 large)
2 cups - 1/2 & 1/2
1 (15 oz) can pumpkin
1 cup firmly packed brown sugar
1 cup raisins or chopped dates (optional, I don't use them)
4 large eggs
1 tsp cinnamon
1 tsp. vanilla1/2 tsp ground ginger
1 cup chopped pecans or walnuts (optional)
Garnish: sweetened whipped cream and pastry leaves OR milk

Preheat broiler on low. Positing rack in the top third of the oven. 
Cut large croissants into big cubes.


Broil until toasted, tossing to brown all sides.



Preheat oven to 350. Spray a 13x 9 baking dish with nonstick cooking spray. 
 In a medium bowl, combine 1/2 & 1/2, pumpkin, brown sugar, raisins, eggs, cinnamon, vanilla and ginger and nuts. Stir well.
Pour mixture over croissants, tossing gently to coat. Let stand for 30 minutes.
Bake 35-40 minutes or until a wooden pick inserted in center comes out clean.



 Cut into squares to serve (I just scoop it out). Garnish with whipped cream and pastry leaves.

  3. Stop, stop, stop!! You're gonna make me crazy with all your great recipes. This is gonna be an all time favorite because I'm a bread pudding nut. And pumpkin too, so what's not to love? Instead of whipped cream I'm going to pair it with Creme Anglaise sauce. Yum.

It's a coconut cake recipe that my friend Nancy did for my birthday this summer (we also served coconut cake at my MIL's 80th), and everyone wanted the recipe. Another friend always takes it to Bible Study, pot lucks, Christmas parties and just about everywhere she has to take a dish because it is a smash hit. It's extrememely moist and delicious. I was finally able to get Nancy tonight to get the recipe.

  6. I could eat pumpkin eight days a week ;o) My favorite coffee shop was sold out of pumpkin donuts today, and come to find out, everyone is ordering them ahead. They can't keep up. I love, love, love bread pudding. I really need to make this!

  10. I am not generally a bread pudding fan, which is strange, since I am from the South, and Southerners LOVE bread pudding. However, I am definitely going to try this. It looks and sounds fabulous, and I LOVE anything pumpkin.

  14. This is something I will try. I was thinking about bread pudding the other day. My mother made the best one ever...and she never used raisins either. She did use lots of cinammon and nutmeg though. It sounds really good with the pumpkin...I suppose it would be much "mushier" if you didn't toast the croissants first? Thanks for the great recipe.     I've had something similar made with Krispy Kreme donuts -- the first bite or two seemed really good but then there was a sickly sweet aftertaste. I think I'd like your recipe far better (love croissants in any form or fashion!).

    Your Fall Brunch Tablescape was spectacular, btw. Sorry I didn't get by sooner to check it out.
