Raspberry Sauce

Pink Saturday:

I have been in a cooking mood lately. I blame it on the snow! We have had  two major snow storms in the last two weeks and this week we were literally snowed in. The road in front of our home was drifted shut until yesterday late afternoon. So what's a girl to do? This girl cooks!

For breakfast yesterday I made some delicious, light as air cream scones (new recipe- look for a post soon) and wanted to make something yummy to drip all over and out of them. I had frozen raspberries in my freezer so I made a lovely sweet and fruity raspberry sauce. We ate it warm on the scones, and I am using it as a filling for a dessert next week (and upcoming post). This sauce is oh, so easy to make and will turn any dessert into a culinary creation!

 Ladled into a sweet jar with a bow and a lovely sentiment, it makes a thoughtful  gift too! That is if you don't eat it first! In that case make sure to double the recipe.


Recipe:
1-10 oz. or a little bigger, bag of frozen raspberries or mixed berries
2 TBS corn starch
4 TBS sugar
1 tsp lemon juice
water
2 TBS raspberry flavored liqueur, optional

Thaw raspberries. In a saucepan add cornstarch, sugar and just enough water to cover the mixture. Stir to disolve. Add lemon juice and raspberries and any juice. Heat till just bubbling. Stir occasionally to keep from sticking to the bottom of the pan. Simmer for 5 minutes and raise heat to gentle boil. Stir until thickened, about 1 minute. Take off heat. Stir in liqueur.

Place sauce in a strainer with a bowl under it and strain out most of the seeds. I like a little bit of seeds in my sauce. Serve immediately or cool in refrigerator. Keep refrigerated.

  3. Yvonne..I am a self confessed sconeaholic..I'll be watching for that post. I love the raspberry sauce and the packaging is adorable. We were snowed in back in December and I cooked and baked like crazy.

  9. Oh, my. My favorite fruit in a sauce for scones! Please share that scone recipe SOON. I made some scones at Christmas time and they sounded so good in the magazine, but were a mess and not very tasty. Your pictures are always so bright and clear. Shall we wager a bet as to when the snow all melts? My drift in the shade is still very deep. Thanks for sharing.

    That raspberry sauce sounds divine. :0)I used to do a lot of gourmet cooking but have stopped most of it due to my raised cholesterol...always something to spoil the fun, right!! hehe :0)

    So I especially love reading all these fabulous recipes and *imagine* the smells and flavors. :0)

    My heart pendent is actually made from some super soft nylon that has sparkles in it..it was very fluid and you need that to make these shapes look good. I do have silk ribbons and rayon ribbons..love, love working with them.

    Thanks so much for coming over to visit me...it's nice to meet you...welcome to PiNk Saturday!..next week will be my 75th consecutive week of participating...it's part of my life now. :0) So many lovely ladies and gents out there with so much to share.

  12. I bet its beautiful too! When I worked in Alaska as a chef on a yacht I found some salmon berries, the are like raspberries only a salmon color and i used them as a sauce like you made there... it was SO pretty!

  13. Happy Pink Sat and Valentine's Day! OMG..what a yummy looking sauce! I am going to make a crepe dessert later today....the recipe called for a raspberry sause and I couldn't find it at the store (already made). However, I did pick up a package of fr. rasp. and NOW I will use your amazing recipe to create the sauce!! Thank you...thank you!

    Hope your snow ends soon....we live in MO and had a blizzard at Christmas with several more snowfalls over a couple of weeks. Today, NO SNOW on the ground or in the air...it's cold, but it's sunny!
