If fall was a dessert it would be RAW APPLE CAKE!
I know you are probably thinking... "What, not something pumpkin?"
Okay, well maybe late fall... towards Thanksgiving... would be pumpkin dessert time. But for this time of year RAW APPLE CAKE wins hands down!!!
Please, just trust me on this... it will be your favorite fall dessert too! It's that good...
This was one of the very first recipes I collected as a young woman... even before I was married. And I've made it for decades... and decades!
STONEGABLE RAW APPLE CAKE
3 cups apples, cored, skin on and cut into small pieces
3 cups flour
2 cups white sugar
1/2 tsp salt
1 1/2 tsp baking soda
1 cup vegetable oil
2 eggs
1 1/2 tsp vanilla
1 cup walnuts, chopped
Preheat oven to 325 degrees.
This recipe makes 1 bundt cake or 2 loaves.
In a large bowl mix together flour, sugar, salt and baking soda.
In another medium bowl whisk together the oil, eggs and vanilla.
Add the egg mixture to the dry ingredients and mix by hand. This batter will be VERY VERY stiff... like cookie dough.
Add the apples and walnut and mix in.
Spray a bundt pan or loaf pans with cooking spray. Dump the batter into the pans.
Cook for 1 hour. I always test the center to see that it is fully cooked. Sometimes it may take longer.
Let the cake cool and then turn out onto a wire rack.
I serve my RAW APPLE CAKE with a scoop of vanilla ice cream!
Oh this looks delicious - one of my favorite desserts is apple crisp so this is right up my alley!

I already have this recipe in my board on Pinterest. I have a long time looking an apple cake recipe like this. I will make it soon. It remembers me when my girl was a baby and she couldn't eat cake with milk. I bought a cake like this( without milk )at a Bakery for her Father's Birthday. She liked it so much and said:" I like it, leave it there".

ReplyDeleteThis is so close to a recipe from a dear friend but it has cinnamon in it! We started serving it with hot caramel sauce, definitely delicious and over the top! We have an apple orchard with many types of apples and I am always on the lookout for new recipes. Looking forward to baking this tomorrow! We are just starting to harvest our Jonagolds. Yum! ReplyDeletethis looks really tasty but i was wondering if you thought i could halve the amount of oil? it just sounds like such a lot. i would sub in 1/2 cup of applesauce or apple butter....
ReplyDeleteWhen you divide the amount of oil per serving it is not that much. I bet halving the oil would work if you used applesauce... but it might change the texture. I'd keep the oil and only have one slice! Hope this helps.

ReplyDeleteHi Yvonne, Just put this in the oven. I was wondering though, even after adding the apples and nuts the batter was still quite stiff and crumbly, is it supposed to be like that? Maybe my apples weren't juicy enough. Made mine in a bunt pan, as I couldn't find my 2nd loaf pan. Will be taking it to a family gathering. It smells just wonderful.
ReplyDeleteHi Debby, you will be fine! The batter is so so thick. Like stiff cookie dough. When it cooks the apples will give off some liquid. I bet your cake will be scrumptious!
