Tea Sandwiches and Punch:
For over 100 years,Tea Sandwiches have made their appearance at most occasions hosted by women of good breeding. But sadly, they fell out of vogue some years ago. That is until lately. They are making up for lost time!
In the past few months I have attended three functions where these lovely, dainty savories were served. And in planning a bridal shower, my daughter (the very young matron of honor) requested we make them. And if I do say so myself, they were a hit!
Last Foodie Friday, I posted the savory treats and tidbits for a recent bridal shower. If you missed it and would like the recipes click HERE.
Upon request, I am sharing the tea sandwich recipes, as well as StoneGable's Strawberry Lemonade Punch.
Tea sandwiches are so easy to make, can be made up ahead and are very filling. Great for a large party!
I hope you will try some of these delightful little bites for your next girly get together.
Pimento Cheese Finger Sandwiches on Bunny Bread:
2 cups shredded good quality extra sharp Cheddar cheese (I use 1 cup cheddar and 1 cup Jack)
1 (4 ounce) jar chopped pimentos, drained and chopped
2 oz. cream cheese, softened
1/2 cup mayonnaise, or more if needed
1/2 TBS grated onion
dash of Worchestershire sauce
salt and pepper
Soft white bread
snipped fresh chives
Mix all ingredients together except bread and chives. Cut crusts off bread and spread with pimento cheese spread. Roll up witdthwise and cut into halves or thirds. Plate standing on end. Sprinkle with chives.
Chicken Salad with Dried Cranberries and Toasted Pecans on Wheat Bread
Store bought chicken salad 1 lb container
1/2 cup dried cranberries
1/2 cup toasted pecans
Whole wheat bread
Put cranberries and pecans in the food processor. Whizz until finely chopped. Mix into store bought chicken salad and stir to incorporate. Cut crust off of wheat bread. Spread chicken salad on bread and put second piece of bread on top. Cut into triangles.
StoneGable Egg Salad with Cream Cheese and Herb Tripple Decker Sandwiches
For the recipe click HERE.
To assemble: Cut crusts off of white bread. Spread egg salad on two pieces of bread and stack on top of eachother. Add a piece of bread on the top. Cut in thirds widthwise.
Turkey and Cheddar on Rye with Poppyseed Mayonaise with Apples and Balsamic Reduction
This tea sandwich won Miss Popularity! Everyone raved!!!!
1/2 lb good quality off-the-bone turkey breast
1/2 lb good quality sharp cheddar cheese
1/4 cup poppyseed dressing (I use Brianna's)
1/4 cup real, full fat mayonaise
2 granny smith apples
1/2 cup balsamic vinegar
rye bread
To make the balsamic vinegar reduction, heat vinegar in a pot on low heat and simmer until it reduces to 2-3 TBS syruppy liquid. Remove from heat and reserve.
To make poppyseed mayonaise, conbine poppyseed dressing and mayonaise in a small bowl.
Cut crusts off of rye bread, and spread bread with poppyseed mayonaise. Top with a turkey slice and cheddar cheese. Put an apple sliver on top of the cheese and drizzle with balsamic reduction. Serve open faced.
StoneGable Strawberry Lemonade Punch
This was a punch of necessity. I really didn't like any of the punch recipes I had. So I made up my own.
4 quarts Crystal Light Lemonade
1-2 lg pkg frozen strawberries, thawed and mashed or whizzed in food processor
2 lg bottles Sprite or lemon lime soda
1 small container lemon sorbet, very soft
ice ring, recipe follows
Mix all ingredients together in a large punch bowl. Add ice ring.
To make ice ring: Fill a fluted tupperware container with lemonade. Add a pkg. of frozen mixed berries. Freeze. Just before serving, remove from tupperware and float in punch.
I am joining Michael Lee West At Designs by Gollum for Foodie Friday. This is the yummiest meme of the week!
Yvonne-These are beautiful! They never fell out of favor here--My old home town is famous for its tomato sandwiches and homemade mayo. I think the turkey and cheddar is a good update on old tradition!
ReplyDeleteYum,yum, yum. I have to make the turkey, apple and balsamic sandwiches. Believe it or not my teenage sons would love that food combination. And, you can never fill them up.:)
ReplyDeleteI just love all of this! You sure went to a lot of work for this..it is all so nice! Bless your hear, I'm sure it was greatly appreciated! Come say hi :D
ReplyDeleteWe still serve finger sandwiches for special "girly" occasions too. I love your recipes and appreciate your sharing them. Best wishes to the new couple.
ReplyDeleteThe tea sandwiches look scrumptious--your photos are food for my soul.

I am still of the college where tea sandwiches reign supreme for a lovely ladies get together. Your chicken salad closely resembles mine except mine contains honey mustard dressing as well. Pimento cheese is a mainstay for Southern entertaining. I could reach right into my computer screen and take a bite out of each of your pictures. I know your party was a huge success!
ReplyDeleteYvonne, tea sandwiches are very commonly used here- I don't know that they ever went out of style in the South, though I know they "disappeared" for a while up north. As always, your presentation is stunning! I hope you'll post pictures of this wedding!

This just makes me yearn to have a proper tea party. Everything sounds so wonderful! I am going to save some of these recipes for when we have impromptu guests over this summer. Or maybe a farmhouse party and invite all my bloggy friends! How fun would that be? It is a shame that tea parties went out of vogue. They just sound so much fun.
ReplyDeleteOh Yvonne, thank you so much for posting this. My daughter's shower is in Aug. so I will make all of these too! Thanks again!!! XO, Pinky
ReplyDeleteI love you...and tea sandwiches. These recipes are sure to be scrumptious!
ReplyDeleteWhat GREAT party food!! It looks delicious!!

They are in some way always the same. Your recipes are often totally new here. This sandwiches reminds me on my time in USA where I often enjoyed delicious turkey salad sandwiches from the local deli.
ReplyDeleteGreetings, Johanna

These food are amazing, you really did a good job with all the cooking and presentation! I'd love to be one of your guests, lol! I like your version of punch. It has that fruity sense but not like a Hawaiian punch. I like the thought of mixing strawberries and lemon in a concoction.
ReplyDeleteJust yesterday, a tennis friend asked me for some "tea party ideas". She is hosting her 90 year old Aunt & some friends with one. I'm sending her here straight away!
ReplyDeleteThank you so much for sharing these luscious looking little treats as well as the punch recipe, too. Yours sounds much better than the sickening sweet ones I've had (and served-*blush*)

ReplyDeletecatching up on all i missed, you need a tv show and book... you truly have it ALL~
ReplyDeleteI am going to remember this punch recipe! I am not a punch fan. Lucky for me, neither was my wedding director - she had created her own recipe as well. LOL - two days before my wedding and I'm hitting EVERY high end grocery store looking some soda called Wink (I think that's what it was). But everyone at my reception loved it, and it looked like champagne! Even had beautiful grapes floating in it!
ReplyDeleteSo...that being said, it's too much to hunt down Wink, I'll try yours for my next party (hopefully, that will be a baby shower!!!)

I've been looking for a set of 3 in different heights but they seem nearly impossible to find! Any Suggestions?
I am saving this page for the next time I have a ladies' tea. Great ideas!!
